What is the difference between the available tariffs? 

With Simply Fixed your unit rates and standing charge won't change for the length of your tariff. Whereas with Simply Tracker, you'll always pay below the government price cap and are guaranteed to pay £50 less than EDF’s Standard Variable tariff over the year if you’re on a dual fuel tariff, or £25 less a year if you’re on a single fuel tariff.
